Makes about 2 ½ quarts
Switchel, also switzel, swizzle, ginger-water and haymaker’s punch, is a refreshing hot weather drink made of sugar, ginger, molasses, vinegar and water. This unusual creation originated in the West Indies. By the late 1600’s it had become popular in the American Colonies as a refreshing, summertime nonalcoholic drink. By the 1800’s it had become known as “Haymaker’s Punch.” It is a delightfully different and refreshing drink for hot weather. You will be able to see why pales of it were carried into the fields at haying time. It is mentioned in both Herman Melville’s “I and my Chimney,” and Laura Ingalls Wilder’s “The Long Winter.”
1 cup sugar
1 cup cider vinegar
½ cup dark molasses
1 tablespoon powdered ginger (or to taste)
1 quart hot water
1 quart cold water
Put the first five ingredients in a large pitcher of jar and stir until all are well blended. Add remaining water and stir well. Serve in tall glasses over ice. Garnish with a sprig of fresh mint. |
