This is a delicious summertime cooler with definite health benefits.  Honey, although still a sugar, is healthier than refined sugar, and there are many health benefits to ginger.  One of ginger’s major attributes is it’s anti-inflammatory qualities.  All health issues aside, this lemonade is just plain good.

 

1 cup honey (or to taste)

1 cup water

4 or 5 thin slices of fresh ginger root

 

1 cup fresh squeezed lemon juice

1 quart cold water (or to taste)

 

Put the honey, 1 cup of water and ginger in a pan and bring to the boil.  Reduce to a low simmer and continue to cook, stirring occasionally for about ten minutes.  Allow to cool and strain into a pitcher.  Add the fresh squeezed lemon juice and a quart of cold water, or to taste.  Add a sliced lemon if you wish.  Serve over ice in tall glasses.  Garnish with a slice of lemon and a straw.
