General Blackberry Fool

Serves 4 to 6

 

A fool is a delectable and incredibly easy way to use beautiful, fresh blackberries.  There are divided opinions as to how this classic English dessert got its name.  One is that “fool,” comes from the French “flouler,” which means to mash.  The other is that it is so easy to make that even a “fool,” could do it.  No matter which theory you prescribe to, you would be a fool not to like it.

 

3 cups of ripe blackberries

Sugar to taste

1 pint of whipping cream

 

Pick over and rinse the berries.  Drain well.  Place in a bowl and mash, then push through a sieve to remove the seeds.  Add sugar to taste.  Set aside.  Whip the cream until it will hold firm peaks.  Gently fold the berry mixture into the cream.  Do not fully incorporate.  You want there to be streaks of cream and streaks of the berries puree.  Pour into attractive dessert dishes.  I like to use tall stemware glasses.  Chill thoroughly before serving.
