Tuscan Bruschetta

Serves 4 to 6


For real garlic lovers, this simple snack is an absolute must.  Easy and electable, it’s a sort of a Tuscan salsa, if you will.  This is perfect for a casual family meal.


About 4 ounces of Fresh Mozzarella, cut into small cubes

6 to 8 cloves of Roasted Garlic, chopped

2 or 3 fresh tomatoes, Chopped

6 to 8 fresh basil leaves, chopped

1/4 cup Olive oil


Lightly toasted quart inch slices of Italian or French baguette


Finishing salt and fresh coarse ground black pepper


Place the first five ingredients in a bowl and mix well.  Slice and toast the baguette and place in a basket lined with a cloth.  Accompany the tomato mixture with the basket of toast, a shaker of finishing salt and a pepper grinder.  Each diner spoons a bit of tomato mixture onto a toast round and adds salt and pepper to taste.  What could be easier or taster.  This would be an excellent accompaniment to a rich red Wines_from_Tuscany or a full bodied California Zinfandel.
