If you are a burger fan, I think you will love this low fat, no cholesterol creation. It’s rich and delicious enough to satisfy even the most dedicated carnivores.
For each serving you will need:
Slices of a large Portobello mushrooms
About half a roasted red pepper
2 or 3 cloves of roasted garlic
Slice of sweet purple onion
Lettuce
Sweet and Hot Brown Mustard
Fresh coarse ground black pepper to taste
Crusty sourdough French rolls
Remove the stems from Portobello mushrooms and cut into quarter inch thick slices. Brush with olive oil sprinkle with a salt free seasoning like Mrs. Dash. Grill, broil or sauté to desired degree of doneness. Cut the roasted pepper into strips. Set aside and keep warm. Cut the roasted pepper into strips. Finely mince the garlic mash. Split the French rolls and lightly toast. Spread one side of the roll with the roasted garlic and the other side with the mustard. Lay strips of grilled Portobello on the bottom half of the roll. Top with strips of roasted pepper and a slice of purple onion. Add lettuce and some fresh black. Top with the other half of the roll and prepare for some fine munching. |
