1 ½ cups of all-purpose flour

1 tablespoon baking powder

1 tablespoon powdered ginger

2 teaspoon powdered cinnamon

1 teaspoon ground nutmeg

1 cup oatmeal 

1 cup sugar

1 cup dark molasses

1 stick butter

2 eggs

3/4 cup milk


Preheat the oven to 350°.  Line an 8 x 8 x 2 inch baking pan with baker’s parchment and set aside.  Sift all dry ingredients  together, then add the oatmeal. Put the molasses, butter and sugar into a saucepan and melt together slowly, then allow to cool.  Beat the eggs with the milk and add to the cooled molasses mixture.  Add slowly to the dry ingredients and mix well.   Pour into the prepared baking pan and place in the center of the oven for about forty-five minutes, or until a slim bamboo toothpick inserted into the center comes out clean.  Remove from the oven and cool on a rack.  Parkin is better when made a few days ahead of time.  Since it has a sticky texture, it is easier to cut into squares after it has sat a while.
