Although this delectable canapé is designed to be served hot, it is a simple thing. You may assemble them well in advance, cover them with a moist tea towel or plastic wrap and just pop them in the oven for a few minutes before serving. You will need a loaf of that small cocktail rye bread. The small oval slices are no more than three inches in the longest direction. If you can’t find any, choose thinly sliced regular rye and cut it in half or quarters.
Cocktail rye bread
Fresh Mozzarella
Tomatoes
Sweet purple onions
Roasted Garlic
Salt and fresh coarse ground black pepper to taste
Fresh basal
| Cover each slice of rye with a thin slice of fresh Mozzarella. Top this with a thin slice of ripe tomato and a scattering of slivered sweet purple onion. Top with a clove of roasted garlic and add salt and pepper to taste. Just before serving pop under the broiler until the Mozzarella just begins to melt. If you leave it too long it will run away. Top each serving with a small fresh basal leaf and serve immediately. |
