Serves 4 to 6

 

A true Caesar Salad does not have a dressing that comes from a bottle.  A true Caesar Salad does not have chicken, ham, red cabbage, Radicchio or any other enhancements.  Caesar Salad was the creation of Mexican/Italian chief Ceasar Cardini at his, Caesar’s Restaurant, in Tijuana in 1929. Having its origins in Tijuana, I guess that makes it a Mexican dish.  It is a magnificent creation and should not be tampered with.  Yes, it has a raw egg in it.  Hey, there is a far greater chance that you will be killed in your car on the way to the store to buy the eggs than that  you are going to get sick from eating them raw.

 

1 teaspoon capers, rinsed and drained

1 or 2 anchovy fillet, finely minced

1/2 teaspoon Worcestershire sauce

1/2 cup freshly grated Parmesan cheese 

3 tablespoons olive oil

The juice of one lemon

 

The tender inner leaves from 2 heads of crisp Romaine

About 2 cups Garlic Croutons

1 teaspoon capers, rinsed and drained

Salt and fresh coarse ground black pepper to taste

1 raw egg

Put the first six ingredients in a wooden salad bowl and whisk them together well.  Add the Romaine, torn into bite size chunks, the croutons and the capers.  Add salt and pepper to taste.  Break the egg on top and toss gently but well enough that the egg will coat all the Romaine.  Serve at once.  All ingredients and the bowl should be cold when you begin.
