Leftover Chicken Burritos

Just in case you hadn’t already thought of it, here is something easy and delicious you can do with leftover chicken.

 

Cut the leftover cooked chicken into thin slivers and set aside *

Chop some tomato

Chop some green onion

Grate some jack, Swiss or Mozzarella cheese

Shred some crisp lettuce

Dice some ripe avocado

 

For each person, start with a large flour tortilla:  sprinkle on some of each of the above ingredients.  Add a bit of salt and pepper to taste and roll up.  You can lightly heat them in the microwave but it is better to place them in a very lightly oiled skillet and very lightly toast them on each side.  Serve with salsa and sour cream.

 

* These are excellent made with any slivered, leftover meat or fish.  Slivered leftover pork roast is particularly good.
