Makes 2, 8 to 9 inch round layers or one 5 by 9 inch loaf

 

2 cups sifted cake flour

1 tablespoon baking powder
½ teaspoon baking soda

 

(1-ounce) squares unsweetened chocolate
½  cup
(1 stick or ¼ pound) butter
1
3/4 cups sugar
2 large eggs


1 ½ cups of buttermilk
1 tablespoon vanilla extract

Preheat the oven to 350°.  Sift the flour, baking powder and baking soda together and set aside.

 

Blend the butter and sugar together until smooth and fluffy.  Add the eggs and continue to blend until they are completely incorporated, smooth and creamy.  Melt the chocolate and add to the egg and sugar mixture.

 

Begin adding the sifted dry ingredients alternately with the liquid just until well blended.  Blend in the vanilla.  Pour into baking pans that have been lined with Bakers Parchment, oiled and floured or sprayed with non stick spray.  Place in the center of the preheated oven and bake for 30 to 35 minutes, or until a slim bamboo skewer inserted in the center comes out clean.

Frost as desired.
