Makes about 2 cups
This is a recipe for a zesty dip utilizing California’s bounty of fresh produce. It is moderately hot and zesty, yet the mint and other fresh ingredients give it simultaneously a cooling and refreshing effect.
1, 16-ounce carton dry small curd cottage cheese
1 cup favorite chunky salsa
1 green onion, chopped small, including the greens
4 teeth of garlic, finely minced
1 Serrano chili, seeded and finely minced (optional)
2 to 3 tablespoons finely minced fresh mint
2 tablespoons finely minced fresh cilantro
1 tablespoon finely minced fresh herb dip
1 teaspoon sugar
Salt and fresh coarse ground black pepper to taste
Mix all ingredients together and chill before serving. Garnish with a slice of fresh lime and a sprig of fresh herbs. This dip is excellent with either chips or cut vegetables. |
