Makes about 2 cups
This is a most unusual dip. Being a bit on the sweet side, it's an excellent choice to serve with cut fresh fruit or pita bread for dipping.
1, 4-ounce can crushed pineapple, drained
2 cups yogurt
1 teaspoon curry powder, or to taste
1/4 cup finely chopped celery
1/4 cup finely chopped sweet purple onion
1 green onion, finely chopped, including the greens
1 small Serrano chili, seeded and finely minced, or to taste
About 2 tablespoons finely minced fresh mint leaves
Sugar to taste
Salt and fresh coarse ground black pepper to taste
Mix all ingredients together. Garnish with a sprig of fresh mint and a twist of lemon. This dip is far better served with cut fresh fruit and celery sticks or wedges of Pita bread for dipping than it is with chips. |
