Serves 4 to 6

OK, so this recipe really cheats.  It’s for those days when you just don’t feel line making a from scratch meal, but a microwave burrito won’t do the trick either.  This also happens to be a time when the fake stuff is better than the real thing.  I have found that the imitation sour cream “IMO” works better for this dish than real sour cream.  It isn’t quite as acidic.

 

2 tablespoons olive oil

1 onion, chopped small

4 to 6 cloves garlic, minced

 

1 16 oz carton sour cream or IMO

1 can minced or chopped clams, including the liquid

1 tablespoon minced fresh dill weed or ½ teaspoon dry dill weed

Parmesan cheese

Heat the olive oil in a heavy skillet. Gently sauté the onion and garlic until soft and translucent but not yet beginning to brown.  Add the sour cream, clams and dill weed.  Cook over a moderate heat until hot through, stirring frequently.  Add Parmesan, salt and fresh coarse ground black pepper to taste.  Serve over linguine ,fettuccini or gnocchi.
