Real, from scratch pudding is as easy to make as it is to eat.  Served hot or cold it is a guaranteed kid pleaser and it is the starting point for many other delectable desserts.

¼ cup cornstarch

½ to 2/3 cup sugar or to taste

3 cups whole milk or half and half

1 tablespoon vanilla

Mix the cornstarch and sugar together in a heavy sauce pan.  Add the milk and cook over a medium heat, whisking constantly until the mixture thickens.  Whisk in the vanilla and continue cooking, still whisking, for another two or three minutes.   Remove from the heat and serve warm or chilled.
