Using Hard-Boiled Eggs

Last year we hosted an Easter Egg Hunt for the kids in our neighborhood.  We boiled and died fifteen dozen eggs, most of which, much to my horror, were thrown away.  First, since I had used commercial, restaurant supply food coloring, the dyes were far more intense than traditional Easter Egg dyes and in some cases they penetrated the shells, leaving color on the hard-boiled egg inside.  Some parents thought I had used toxic dies.  However in most cases the parents just said, we can’t eat that many hard-boiled eggs. 

 

If any of you have a problem using up the hard-boiled eggs after your Easter Egg hunt, I hope the following recipes will be of help.  AND remember, despite the cholesterol,  a hard-boiled egg is still far more healthy than Easter candy.
