Makes about 3 cups

 

Salsas are a very personal thing.  Some people like them sour, some a bit sweet, some need them quite mild, others want them to blow the top of their heads off.  You may adjust the flavors of this salsa to be as mighty or mild, as sweet or as sour, as you wish.  It’s great with all your South West dishes: tacos, burritos, enchiladas, beans, rice etc.  And of course served with a basket of tortilla chips it gets any gathering off to a great start.

 

4 to 6 ripe tomatoes, diced

1 medium size yellow onion, diced

1 or 2 green onions, chopped small, including most of the greens

2 to 3 cloves of garlic, finely minced

About half of a red, ripe pepper, diced

Minced Jalapeño chili to taste

½ cup chopped fresh cilantro

The juice of one lime, or to taste

½ teaspoon sugar, or to taste

Fresh coarse ground black pepper to taste

Salt to taste

 

Mix all ingredients together and store in a covered container in the refrigerator.  Use as needed.  I think it’s better after it has sat for a day or two.
