Makes 1, 8 to 9 inch Pie

 

This recipe, a long time family favorite contains no marshmallows or marshmallow cream.

 

1 cup vanilla pudding or use instant

 

1 envelope unflavored gelatin

1/3 cup cold water

¼ cup green crème de Menthe

¼ cup white crème de cocoa

½ pint whipping cream

 

1 chocolate cookie crumb pie crust

 

Make the pudding and if making from scratch, allow to chill.  In a small saucepan, sprinkle on the water and leave to soften.  When softened, stir over a very low heat until the gelatin is dissolved.  When the pudding is completely cooled, mix in the liquors.  Beat the whipping cream until it holds stiff peaks.  Temper the pudding by slowly and gently folding about 1 cup of the whipped cream into it.  Then, a bit at a time, gently fold the tempered whipped cream into the remaining pudding.  Pour into the pie shell and chill before serving.  Garnish with a light sprinkling of chocolate cookie crumbs, dollops of whipped cream and sprigs of fresh mint.
