Grilled Chicken Breasts with Fresh Peach Salsa

Serves 4

After you’ve made the salsa, which is easy, this is about as easy as it gets, and oh so yummy and with absolutely no guilt necessary.

1 teaspoon sugar

½ teaspoon salt

½ teaspoon fresh black pepper

About 1/8th teaspoon cayenne

4 boneless, skinless chicken breasts

Olive oil

Fresh Peach Salsa


Mix the first four ingredients together and rub into the chicken breasts. Paint the beasts with olive oil and toss on the grill or under the broiler. Cook to desired degree of doneness, turning once or twice. Remove from the grill, place on individual serving plates and place a dollop of the salsa on each. Garnish with a sprig of fresh mint, dill or cilantro.
