Almost Tropical, Fruit Salad

Depending on where you live, you may or may not be able to find a good selection of tropical fruits; pineapple, papaya, mango, etc.  Most likely you will be able to find fresh pineapple and bananas.  Most melons that we Haoles are use to and most deciduous fruits and berries do not grow well in paradise.  It is far too humid.  However, nothing says party like a watermelon hollowed out and filled with cut fruit, so use what is available and attractive.  Serve the cut fruit in a bowl or a hollowed out watermelon.  Sprinkle with just a bit of sugar and add sprigs of fresh mint.  A nice touch is to pour a bit of champagne over the fruit just before serving.  Please, do not goop it up with whipping cream or artificial cream topping.  Blatch!

Bananas turn brown to quickly and tend to get slimy

Fresh pears tend to turn brown and get slimy

Mangos are difficult to cut and seed and you don’t get much each one and they are expensive.
