Makes about one quart
You don’t have to have a churn or an ice cream maker or machine to make ice cream. A churn is fun. A modern ice cream maker is handy. For years before we got a churn, my mom made all her ice cream in trays in the freezer compartment. Sure, it does take a bit longer, and you have to watch it and stir it frequently, but it is doable. You don’t need to make a custard, or add eggs, or cornstarch or flour etc. True, supurb, excellent old fashion ice cream has three ingredients: cream, sweetening and flavoring. In this case the sweetening is sugar. It could be honey or Splenda. In this case the flavoring is blackberries. It could be peaches, or pineapple or vanilla or coffee or chocolate.
2 cups fresh blackberries
1/2 cup sugar, or to taste
1 quart whipping cream
Pick over and rinse the berries. Drain well and place in a bowl with the sugar. Allow them to sit for at least thirty minutes before adding to the cream. Stir into the cream. If you have an ice cream maker, machine or churn, follow the manufacturer’s directions. |

If you are going to make in trays, pour the mixture into trays and place in your freezer. Check it every thirty minutes. As soon as it starts to form ice crystals, use a table fork, break the crystals up and stir them into the liquid. Continue to freeze. Keep doing this until the entire mass is the texture of ice cream. At this point you may either serve it or pack it into a freezer proof storage container and keep it for later.
If, during the freezing process, you do not keep breaking up the ice as it forms, it will become a sweet, berry flavored ice cube, not ice cream. Good luck and enjoy.
