Makes about 2 cups
1 cup sugar, or to taste
1 tablespoon corn starch
1 cup of fresh lemon juice
½ cup water
In a small saucepan, mix the sugar and cornstarch together. Add the lemon juice and water and whisking all the while, bring to a boil. Reduce the heat to maintain a rapid simmer and continue to cook until the mixture is shiny, translucent and somewhat thickened, about 5 minutes. This glaze is used to enhance baked goods in the same way that baker’s syrup is. It may be stored in the refrigerator for about 2 weeks. |
