What a treat on a lazy weekend morning.  Fragrant cinnamon, apple muffins, fresh from the oven, ready to split open an drench in golden butter.

 

2 cups all-purpose flour

1 tablespoon baking powder

2 teaspoons cinnamon

1 cup sugar

 

2 eggs

¼ cup vegetable oil

1 cup peeled, cored and chopped apples

2/3 cup water

 

Bakers’ syrup

 

Preheat oven to 350°.  Sift the dry ingredients into a large bowl.  Add the eggs, oil, apples and water an using as few strokes as possible, stir until most of the dry ingredients are moistened.  Over mixing will produce hockey-pucks, not muffins.  Prepare 2 ½-inch muffin pans with non stick spray.  Fill each cup about ¾ full.  Place in the oven and bake for about 30 minutes or until a slim bamboo skewer inserted into the center comes out clean.  Remove from the oven and immediately drizzle warm baker’s syrup over the top of each.  Allow to sit in the pans for a few minutes before removing.  Serve in a basket or bowl that is lined with a clean cloth.
