These sunny, double lemon muffins are a perfect way to greet the day. 

 

2 cups all-purpose flour

1 tablespoon baking powder

1 cup sugar

 

2 eggs

¼ cup (½ stick) melted and cooled butter or margarine

 

The zest and juice of 1 lemon

½ cup water

 

Lemon curd

Lemon glaze

 

Pre-heat oven to 375° and prepare muffin pans with non-stick spray.  Sift dry ingredients together into a large bowl.  Add the egg, butter, lemon juice and zest and water.  Using as few strokes as possible, mix only until the dry ingredients are moistened.  Fill muffin pans ½ full of batter.  Then add a teaspoon of lemon curd to each cup and cover with more batter.  Place in the center of the oven and bake for about 20 to 25 minutes.  Remove from the oven and immediately paint the surface generously with the lemon glaze.  Allow to cool slightly before removing from the pans.  Serve warm.
