Makes about a pint
Marinated mushrooms are always a favorite and for the busy host, this down and dirty, quick and easy version is perfect.
About 1 pound of small fresh mushrooms
2 to 3 cloves of garlic, minced
2 green onions, chopped, including most of the greens
About half a sweet ripe bell pepper, diced
About half a golden ripe bell pepper, diced
2 tablespoons chopped fresh Italian parsley
1 8-ounce bottle of Italian dressing
Trim the mushrooms and blanch for about 30 seconds. Place in cold water immediately to cool. Drain well. Combine all ingredients in a glass bowl and allow to marinate for several hours or over night.
