Makes about 2 cups

 

Blackberry mustard is a great condiment to accompany cheeses and cold meats.  It is also an excellent addition to many sauces, dressings, vinaigrettes, etc.

 

2 cups fresh blackberries

1 cup yellow mustard powder

1 cup sugar, or to taste

1 cup cider vinegar

 

Wash the berries and pick over to remove any stems and leaves.  Put all ingredients in a sauce pot, bring to a boil and immediately reduce the heat of maintain a simmer.  Continue to cook for about twenty minutes, stirring frequently.  Remove from the heat and with a hand masher or an immersible blender, turn the mixture into a puree.  Return to the heat and continue to simmer for another fifteen minutes, or until thickened.  Stir frequently to prevent scorching.  Store in covered containers in the refrigerator.  The mustard will taste rather harsh at first.  It becomes mellow and delicious after a few days.
