Pasta in Garic Cream Sauce

Serves 4 to 6

 

This dish is a garlic lover’s dream.  Easy and delectable, it is a classic Tuscan dish combining fresh, handmade pasta, heady cheeses and lots of garlic.  How can you miss?

 

Fresh Pasta 

1 tablespoon butter

1 tablespoon olive oil

6 to 8 coves of fresh garlic, finely minced

1 ½ cups of cream

1 cup grated Parmesan type cheese

About 2 tablespoons finely chopped chives

About 1/4 cup finely chopped fresh parsley

Salt and fresh, coarse ground black pepper to taste

 

Make the pasta.  Melt he butter and olive oil together over a moderate heat and gently cook the garlic until it is golden but not yet beginning to brown.  Add the cream and simmer over a low heat for about 5 minutes.  Place the pasta in a serving bowl and pour the hot cream over it.  Sprinkle on the grated cheese, chives and parsley and gently toss.  Season to taste with salt and pepper.  Serve hot with fresh baguette, and crisp salad and a crisp white wine.

 

You may also add drained, canned clams or cooked shrimp meat.
