Pears with Blue Cheese & Port

Serves 4

 

This is a beautiful dessert to serve after an elegant meal.  It is light and refreshing, not heavy and overly sweet.  Your guests will think they are at an expensive bistro, AND, it is so easy to make.

 

2 perfect pears

1 cup crumbled blue cheese

Port wine or old growth late harvest Zinfandel

Cracked black pepper

 

Slice the pears in half and remove the core.  Place half a pear on each of four elegant dessert plates.  Fill the center of the pear with blue cheese and scatter a bit on the plate.  Drizzle about two tablespoons of Port wine over all and add a few grindings of fresh black pepper.  Serve chilled.
