Roasted Rutabagas
Serves 2 to 4
1 large rutabaga
2 to 3 tablespoons of olive oil
1 tablespoon Italian seasoning
1 teaspoon sugar
Salt and fresh, coarse ground black pepper to taste
Preheat the oven to 400°. Peel the rutabaga and cut into half inch cubes. Place the cubes in a bowl and add the remaining ingredients. Toss about to coat evenly. Place the seasoned rutabaga on a baking sheet lined with baker’s parchment and place in the center of the oven until tender, about 25 to 30 minutes. Serve hot as a side dish. |
