Serves 4 to 6
I think you will really enjoy the exciting flavors of this excellent salad boasting its Eastern European flavors.
About 6 smallish cooked and peeled beets, (about 2 inches in diameter)
2 medium size seedless oranges, peeled and cut into 1/4 inch thick slices and the slices quartered
About 1/2 a medium size sweet purple onion, cut into thin rings
About a cup of young, tender beet greens
1 tablespoon chopped fresh dill weed
1 tablespoon chopped fresh mint leaves
1/2 teaspoon cumin seeds
1/4 cup olive oil
1/3 cup orange juice
Juice of one lemon
1 teaspoon orange zest
Salt and fresh, coarse ground black pepper to taste
Sour Cream, optional
Cut the beets into quarter-inch thick slices and place in a salad bowl. Add the onion, oranges, beet greens, dill, mint and cumin. Toss gently. Blend the olive oil, orange juice, lemon juice and orange zest together well and drizzle over the salad. Season to taste with salt and pepper and toss gently. Serve chilled. |
