Serves 4 to 6
This delectable salad is a Rosh Hashanah classic. In some areas, you may find pomegranates difficult to get this time of year. The green of Spinach symbolizes a green and plentiful year to come.
About 4 cups of baby spinach
About 1 cup, thinly shredded fennel root
2 red apples, cored, quartered and cut into thin slices, skins on
1/2 a sweet purple onion, cut into thin rings
1 seedless orange, peeled, cut into 1/4 slices and the slices quartered
2 green onions, chopped small, including most of the greens
1/4 cup olive oil
1/4 cup cider vinegar
1/4 cup orange juice
1 teaspoon honey
1/4 cup pomegranate seeds
1/4 cup pine nuts
Salt and fresh coarse ground black pepper to taste
Combine the first six ingredients in a salad bowl and toss gently. Blend the oil, vinegar, orange juice and honey together well and drizzle over the salad. Scatter the pomegranate seeds and pine nuts over all, add salt and pepper to taste. Chill. To serve, bring to the table and toss gently. |
