Basic Cheese Sauce

Makes about 3 cups

 

A good cheese sauce, like many other sauces begins with a basic white sauce.  This recipe uses extra sharp Cheddar, however you may use any cheese or combination of cheeses you wish or that are suited to the application.

 

 

 

1 recipe medium white sauce

1 cup grated extra sharp Cheddar cheese

1 teaspoon Worcestershire sauce

¼ teaspoon grated nutmeg

2 to 3 tablespoons finely chopped fresh chives

Salt and fresh ground black pepper to taste

 

Make white sauce according to directions.  Add the cheese and whisk until all is melted.  Add remaining ingredients, taste and adjust seasonings.
