Makes about 4 cups

 

Simple Syrup is a very handy thing to have hanging around.  It has numerous applications.  You can use it in baking.  It is essential when making Italian meringues and is necessary for a well equipped bar.  Kept in a jar or bottle with a tight fitting lid it will keep for weeks in the refrigerator.

 

2 cup granulated sugar

2 cups water

 

Mix both ingredients together in a saucepan and bring to the boil.  Reduce the heat to maintain a simmer and cook while stirring, until the sugar is completely dissolved.  Allow to cool and then bottle.
