Makes about a pint

Blackberry vinegar is an excellent enhancement to fruit salads. Try sprinkling it on a simple salad of spinach or young endive and Feta cheese.

Fill a quart mason jar with clean, rip blackberries. Add about two tablespoons of sugar and fill the jar with cider vinegar. Cover and leave sit for about two weeks. Strain and bottle the resulting liquid.
