Serves 4 to 6

 

Many of you probably harbor unpleasant memories Waldorf Salad from school cafeteria days.  Please put those memories aside and give this outstanding recipe a try.  A true Waldorf, made of succulent red seedless grapes, not raisins, is a thing of true delight.

 

2 to 3 red apples, cored and diced, skins on

2 cups of sweet seedless red grapes

2 stalks of celery, diced

1 cup walnuts in large chunks

1 small sweet purple onion, chopped

¼ cup chopped fresh mint leaves

 

About 2/3 cup mayonnaise, or favorite commercial brand

About 2 tablespoons Sweet and Hot Brown Mustard, or to taste

Fresh coarse ground black pepper to taste

 

Butter lettuce or romaine

 

Combine first six ingredients.  Mix the mustard with the mayonnaise and drizzle over the salad.  Toss lightly.  Season to taste with salt and pepper.  An excellent presentation is to line a low serving bowl with leaves of lettuce.  Lay a circle of thinly cut red apple rings, (skin on) on the lettuce and pile the salad in the center.  I think you will fine this original recipe a delightful change to the usual apple and raison thing.
