Recipes for October 14, 2009 |
Wow! Mushrooms! Beautiful Mushrooms!
Some of you will have received large bags of gourmet mushrooms. What a special treat! You will find these delicacies have far more flavor that the traditional mushrooms that are usually available in markets. One of my favorite ways to prepare these large, wonderful ‘shrooms is the simplest. I slice them, then heat some olive or other vegetable oil in a heavy skillet and gently sauté some thinly sliced garlic, then add the sliced mushrooms and continue sautéing for two or three minutes. Season lightly with salt and pepper and they are delectable just as they are. |

You can take that a step further and add a bit of sour cream or imitation sour cream and you have s sort of Stroganoff thing you can serve over noodles. This combination is also very nice if served over toasted hamburger or hot dog buns.
Sprinkle a bit of chopped parsley, chives or green onion on top to make it special, and if serving on toast, try sprinkling with a bit of grated cheese and popping under the broiler for a moment or two.

| Or, you can add a bit of broth, stock or bouillon (do you still have some of the powdered chicken bouillon that was in the bags a few weeks ago), and again serve over pasta of some sort. Sauté some sliced zucchini or other summer squash along with the mushrooms and you have an excellent vegetable dish. |

Of course, you can sauté onions, garlic and some of the mushrooms, then add several cups of stock, broth or again, (make broth with that powdered bouillon), and you have an excellent soup. Add a hand full of pasta and some other veggies and it’s more substantial. Serve it with toast snippets you make from some of the hamburger or hot dog buns and you have an excellent supper. |
Vegetarians might try sautéing the mushrooms with garlic and onions and using them to make a vegetarian hamburger.

The churches and organizations listed above take it in turn on a monthly rotation to be responsible the operation of the NOAH pantry. During their month, they are responsible for the organization of the distribution, providing volunteer labor for the unloading of the delivery trucks, packaging and distribution of the food parcels, cleanup and of course the ever dreaded paper work. There is also a stable of regular volunteers who donate their time and energy on an ongoing basis. |
