This is a bit of a different take on the breakfast burrito theme.  Breakfast burritos usually use scrambled eggs.  This one uses chopped hard-boiled ones. 

 

For each burrito you will need:

 

1 large flour tortilla

 

1 hard-boiled egg, diced

About 1/3 of a cup of slivered, chopped or crumbled cooked meat of some sort – (chorizo, sausage, ham, pork, chicken etc.)

About 1/3 cup grated cheese of choice

 

Salsa of choice, (mighty or mild, homemade homemade or commercial)

Shredded lettuce

 

Sour cream or Mexican Crema

 

Warm your tortilla so that it will be pliable.  Place the diced egg, meat and cheese in a line down the center of the tortilla.  Place on a microwaveable plate and nuke just until the cheese melts.  Remove from the microwave and add salsa and lettuce and roll up.  Top with a dollop of sour cream or crema.
