Candlemas Cakes are just little cakes enhanced with honey syrup. You may use muffin tins or any other small baking pans. If you have a collection of little baking pans in different shapes, this is a good time to use them.
To make traditional little Candlemas Cakes, you may use a Basic_Cake recipe or a favorite box mix. Follow the directions for either, adding:
1 cup of currants
1 cup chopped nuts of choice – (not peanuts)
Spoon the batter into muffin tins or other small pans that have been prepared with non-stick spray. Place in the center of a pre-heated 350°F - (180°C or Gas mark 4) oven for twenty to twenty five minutes or until a slim bamboo skewer inserted into the center of a cake comes out clean. Remove from the oven and pour Honey Syrup into each pan while the cakes are still hot. Leave the cakes in their pans until they have cooled. When cool, remove from the pans and allow to sit on a wire rack until any excess syrup has drained off of them.
To use as gifts, individually wrap each cake in plastic or cellophane and tie with a bright colored ribbon.
