Ham & Hard-Boiled Egg Casserole

Serves 4 to 6

 

This is another one of the recipes my mother concocted to use up the plethora of eggs we had on the poultry ranch I was raised on.  The amount of the ingredients may be adjusted depending on your budget at the time.  More or less ham, more or fewer eggs.  The recipe here is just a guideline.

 

1 recipe Basic Cheese Sauce

 

1 cup slivered cooked ham

About 1 tablespoon finely chopped fresh chives

Salt and fresh, coarse ground black pepper to taste

 

5 to 6 hard-boiled eggs

 

About 1/2 a cup of fresh bread crumbs

About 1/4 cup finely chopped fresh parsley

1/2 teaspoon garlic powder

Salt and pepper to taste

 

Preheat the oven to 350°.  Make the cheese sauce.  Add the ham and chives and season to taste with salt and pepper.   Slice the eggs and lay in the bottom of an oven proof casserole that may be served from.  Pour the cheese sauce over them.  Combine the bread crumbs, parsley, garlic powder, salt and pepper and toss gently to mix.  Scatter over the top of the casserole and bake in the preheated oven for about twenty minutes or until all is hot through and the top is beginning to brown.
