Makes 3 to 4 Burgers
These delectable burgers give a lightly Latino flair to an old standby. Be sure to wear a bib.
1 pound ground beef (15 to 20% fat)
1 medium size onion, diced
Chopped canned chilies to taste – (mighty or mild)
1 can chili with beans
3 or 4 Bolillos – (Mexican rolls), French rolls or hamburger buns
Salsa – (mighty or mild)
About 1/2 a cup grated Queso Blanco or Monterrey Jack
About 1/2 a cup of crumbled Queso Fresco or Feta
1 or 2 green onions, chopped, including most of the green
About 1/4 cup chopped fresh Cilantro
Mix the beef, onion and chilies together well and form into patties. Fry, broil or grill the patties. Heat the chili, split the buns or rolls and lightly toast. Place the bottoms of the buns or rolls on individual serving plates and top each with a meat patty. Spoon the heated chili over the meat patty and top with salsa. Sprinkle the cheeses over the salsa and top with a scattering of green onions and cilantro. Top all with the other half of the bun or roll and just try to get your face around it. |
