For Each Burger
This delectable burger type sandwich will please vegetarians and carnivores alike. The grilled or sautéed slice of portabella mushroom gives it the rich satisfaction of a beef burger.
1 large Portabella mushroom
Lightly toasted French roll
Roasted garlic cloves
Mayonnaise
Sweet and Hot Brown Mustard
1 roasted, sweet red bell pepper
Sweet purple onion
Crisp lettuce
Trim the stem off of a large Portabella mushroom and slice it across in a manner to achieve slices that are a bit thicker than a quarter-inch. Sprinkle lightly with salt and pepper, wipe with olive oil and grill, broil or sauté to desired degree of doneness. Split the French roll and lightly toast. Mince several cloves of roasted garlic and spread it on one side of the toasted roll, then spread with mayonnaise and spread the other half of the roll with the mustard. Top the mayonnaise and garlic side with the slice of Portabella. Top that with a piece of roasted pepper, then a thin slice of onion and cover with a leaf of crisp lettuce. Top with the other half of the roll and you have a burger of perfection.
If you eat cheese, try placing a slice of good grade Swiss cheese on the slice of Portabella. |
