Pumpkin Pasties

As all Harry Potter fans know, pumpkin pasties are one of his favorite foods.  They are tasty and not all that hard to make.  They are guaranteed to please wizards and muggles alike.

 

1 recipe your favorite pastry or Perfect Pastry

 

2 cups canned pumpkin purée

1/2 cup ricotta cheese

2 eggs, lightly beaten

2/3 cup of sugar

1 tablespoon molasses

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/8 teaspoon powdered ginger

 

Egg wash – (one raw egg beaten lightly with 1 tablespoon cold water)

Make your pastry and chill it for about thirty minutes.  Blend all remaining ingredients, except the egg wash, together.  When ready to assemble, preheat the oven to 350°.  Roll out half of the pastry on a lightly flowered surface and cut into 4-inch circles.  Remove excess dough and set aside.  Place about two tablespoons of the pumpkin filling in the center of each circle of dough.  Paint the outer edge of the circle with egg wash.  Fold the pastry over to form a turnover. 

Pinch the edges together to seal.  Place the pasties on a baking sheet lined with baker’s parchment.  Continue until all are made.  Paint the surface of all the pasties with the egg wash and using a small sharp knife, make two small slits in the top of each.  Place in the preheated oven and bake for about thirty minutes or until they are golden brown.  Served hot or at room temperature they are sure to please wizards and muggles alike.
