Too many leftover mashed potato cakes. No problem. Make these delicious mashed potato cakes. They are delicious as a side dish or for breakfast with butter and syrup or with eggs. Try them with Applesauce or Spiced Apples.
3 or 4 cups of leftover mashed potatoes
1 egg, slightly beaten
Salt to taste
All-purpose flour
Vegetable oil for frying
Beat the egg with the mashed potatoes until smooth. Add the salt and begin, a bit at a time, working in all-purpose until you have a mixture that is about the consistency of soft biscuit dough. Form into round patties about half an inch thick and three inches in diameter. Heat vegetable oil over a medium-high heat and fry the potato cakes until they are golden brown on both sides. These are excellent as a side dish with meat or for breakfast with eggs. If using them is a savory application try adding a bit of minced fresh parsley. |
