Simple and basic vanilla pudding is the starting point for many delectable desserts, and of course it ain’t half bad on its own.  Served as it is, hot or cold, drizzled with chocolate sauce, topped with whipped cream, nuts or fresh fruit, it is a wonderful old fashion treat.  A good basic vanilla pudding is the backbone of a Traditional English Trifle.

1/4 cup sugar – (or to taste)

2 tablespoons cornstarch

2 cups of milk or half and half

1 tablespoon butter or non dairy substitute

1 teaspoon vanilla extract or flavoring

Blend the sugar and cornstarch together well and add to the milk in a medium saucepan.  Over a medium heat, cook until it begins to thicken, whisking all the while.  It will probably take four or five minutes.  Once thickened, add the butter and vanilla, whisk well and cook for another minute.  Serve warm or chilled.
