Serves 4 to 6
Of course you may make this simple salad with any tomatoes, however using
fresh from the garden heirloom tomatoes gives it a whole new dimension.
1 tablespoon Sweet and Hot Brown Mustard
3 or 4 cloves of Roasting Garlic, finely minced
1 anchovy fillet, finely minced – (vegetarians omit)
2 tablespoons of olive oil
1/4 cup red wine vinegar
2 or 3 large heirloom tomatoes, cut into large dice
A cup or 2 of small pear and or cherry tomatoes
1 medium size cucumber, diced
1 cup pitted black olives, crushed
1 tablespoon chopped fresh basal
1 teaspoon chopped fresh dill weed
1/2 teaspoon finely chopped fresh mint
Salt and fresh coarse ground black pepper to taste
Combine the first five ingredients in the bottom of a large wooden salad bowl
and blend well. Add the remaining ingredients and toss gently. Serve chilled.
