Makes about 2 cups

 

This is an excellent and easy sauce, perfect for serving with Pumpkin Gnocchi or Pumpkin Ravioli .

 

1 tablespoon olive oil

1 tablespoon butter

1 clove garlic, finely minced

1/2 cup puréed pumpkin (canned)

1/4 teaspoon ground nutmeg

1/4 teaspoon dry dill weed

1/4 cup inexpensive cream Sherry

 

1 16-oz carton sour cream or imitation sour cream

1/4 cup grated Parmesan cheese

 

Heat the olive oil and butter together in a heavy pan and gently sauté the garlic until pinkish.  Do not allow to brown.  Add the pumpkin, nutmeg, dill weed and Sherry and continue to simmer, whisking, for about two minutes.  Add the sour cream and whisk until hot through.  Add the Parmesan, whisk to incorporate, remove from the heat and pour over Pumpkin Gnocchi or Pumpkin Ravioli .
