What is Masala? Masala is an Indian spice blend similar to curry. I always say that Masala is for people who always thought they might like curry if it wasn’t so in your face. Masala is an exotic seasoning that doesn’t hit you over the head.
1 or 2 tablespoons of olive oil, peanut oil or ghee (clarified butter)
1 onion, diced
2 cloves of garlic, minced
1 rib of celery, diced small
1 tablespoon Garam Masala
1cup, (1/2 pint) heavy cream
2 to 3 cups of diced turkey meat
1 cup frozen peas
Salt and coarse ground black pepper to taste
Heat the oil of ghee in a heavy skillet and gently sauté the onion, garlic and celery until they are soft but not yet brown. The onion should be pinkish and translucent. Add the Garam Masala and continue to sauté for another minute or two. Add the cream and bring to a boil. Add the turkey and peas, (do not pre cook the peas) and reduce heat to simmer. Continue to cook until all is hot through. Season to taste with salt and pepper, garnish with sprigs of fresh cilantro and serve over steamed rice. |
