When creating food and wine parings, I feel that most people go about it backwards. The usual scenario is to come up with a dish or menu and then try to find a wine to match it. I take a quite different approach. The wine was years in the making; if you count the care and grooming of the vines and the artistry of the wine makers, sometimes decades. Once in the bottle, the wine can’t be changed, however the recipe and menu can. Therefore, I feel the more respectful and efficient approach is to find the wine you like and design your dish or menu to complement it. And that is primarily how I have come up with the recipes and menus you will find paired with wines here on The Questing Feast.
